If you love mangos, this pie is a must-try. It’s a simple frozen dessert that uses only 5-6 ingredients and there is no baking involved.
Mango royale pie will be served slightly thawed. You need to keep any pieces you do not want to serve directly frozen. If you store this pie in the fridge it will be more like a soft pudding. Both the filling and the crust will be very soft. If you like this texture for this pie, go for it. I prefer it semi-frozen, because the crust stays crunchy and the texture of the filling is more like ice cream.

Butter: Browning butter is an example of the Maillard reaction. As butter browns, the water in the butter evaporates, and the sugars and amino acids in the butter react to create a richer flavor compound that turns your dish from delicious to amazing. It only takes a few minutes to brown butter, so do not skip this step, it makes your pie crust incredibly tasty.
Graham Cracker Crumbs: You will need about 2/3 of the crumbs for the crust and the rest for layering on top of the mangos. Depending on how many crumbs you want to use per layer, you may end up with leftover graham cracker crumbs. In case you do not have graham cracker available, you can use digestive biscuits instead.
Mangos: To make this pie taste amazing, you’ll need overripe mangos, preferably ones that are super soft and already have squishy parts. That’s key for this Mango Royale Pie. If you do not have overripe mangos on hand it is best to plan a little ahead. So you can buy ripe mangos and let them sit for a couple of days, until the required level of ripeness.

Make the Crust
Spray a 23cm/9-inch pie pan with non-stick spray and line the bottom with parchment paper. Place the graham crackers in a food processor and pulse to fine crumbs. Then transfer the crumbs to a medium bowl.



Place the butter in a small pot over medium heat. Once melted, keep stirring until the butter becomes dark brown, for about 5 minutes. Remove from the heat and pour the brown butter over the graham crumbs.



Mix well with a silicone spatula. Spread about ⅔ of the crumbs into the pie pan. Press the crumbs up the sides of the pan and into the bottom of the pan firmly. If necessary take a bit more of the reserved crumbs to fill the crust, as it’s important that you have an even, sturdy crust. Chill in the fridge.



Make the Filling
Slice the mangos in half. Score the flesh into 1,3cm/½-inch cubes and take a spoon to scoop them out into a large bowl. With gloved hands squish the mangos until it looks like a chunky mango sauce.



Add orange juice and mix again. In the bowl of a stand mixer beat the sweetened condensed milk and heavy cream on medium-low speed until firm peaks form, for about 5-6 minutes.



Assemble the Pie
Spread about half of the cream into the chilled crust. Spoon half of the mangos on top of the cream, followed by about half of the remaining crumbs.



Repeat the layers with the remaining filling. Transfer the pie to the freezer and freeze overnight. Remove from the freezer and let the pie thaw at room temperature before serving, for about 1 hour. You want to serve it semi-frozen or partially thawed.



Freezing Instructions
When you serve the cake for the first time, let it thaw at room temperature for about 1 hour and then slice the entire cake. Place parchment between each piece to keep them from sticking together and store the pieces you do not want to eat right away in a container with a lid, then place them right back in the freezer. For the pieces you want to serve immediately, it only takes a couple of minutes after cutting to thaw to the perfect serving temperature.
Using this method, you’ll have mango royale pieces ready to serve at any time, and while the whole cake needs 1 hour to thaw at room temperature before it reaches a good serving temperature, each piece only takes 10-15 minutes.


My Summary for Mango Royale Pie
Difficulty: Simple.
Taste & Texture: The filling of this frozen pies tastes sweet and the crust has a slightly nutty flavor. The texture is more or less firm depending on the degree of thawing, either like regular ice cream or soft ice cream. Both options taste delicious to me, but of course that’s a matter of taste.
Time: It takes about 45 minutes to prepare the mangos, brown the butter and finish the crust. Plan about 20 minutes to make the filling. Assembling the pie takes about 10 minutes. After that, the pie goes into the freezer overnight.
