Making these brownies is so easy and you don’t even need a stand mixer for this recipe. All you need is a large bowl and a microwave-safe bowl. Simple, isn’t it?

Recipe Tips
Chocolate: You can use chocolate chips or chocolate bars for this recipe. Some of the chocolate will be melted and the other part will be chopped and folded into the batter. Make sure you use high quality chocolate. Trust me, you’ll taste the difference. I like to use the brand Callebaut.
Sugar: I used a combination of light brown sugar and granulated sugar, as I think this adds more flavor. If you don’t have light brown sugar handy, you can just use granulated sugar. The brownies will still taste great.
Cocoa Powder: You can use either natural or dutch-process cocoa powder. I prefer dutch-process cocoa powder for a more delicate flavor.
Ingredients for Fudgy Brownies
- All-purpose flour
- Butter
- Chocolate chips
- Cocoa powder
- Eggs
- Granulated sugar
- Light brown sugar
- Salt
- Vanilla extract

Directions – How to Make Fudgy Brownies
Preheat the oven to 180°C/350°F and line a 23x23cm/9×9-inch pan with parchment, leaving an overhang on the sides. In a microwave-safe bowl, combine butter and 40g of the chocolate chips. Melt in 30-second increments, stirring in between until the mixture is completely smooth.


Add light brown sugar and granulated sugar, whisking until well combined. Stir in the eggs and vanilla extract. The batter will turn light brown and look a little dull.


Add the cocoa powder, flour, salt and the remaining chocolate chips. Fold it all in by using a silicone spatula. The batter will be very thick.


Spread the batter evenly in the pan and smooth the top. Bake for 30 minutes, then test with a toothpick to see if the brownies are done. If only a few moist crumbs are still visible, your brownies are done. Remove from the oven and let the brownies cool completely on a wire rack.


Storing and Freezing Instructions
Storage: Keep leftover brownies in an airtight container at room temperature for up to 7 days.
Freezing Instructions: These fudgy brownies freeze well, cover them tightly or place them in an airtight container for up to 3 months. Thaw overnight in the fridge, then bring to room temperature before serving.
