You know, I love to make my own granola. Not only is it easy to make, but it is so much cheaper and healthier than buying it at the store. So many textures, so much crunch, the flavor possibilities are endless and you can use the ingredients you like and nothing else. So if you’re into chocolate, you have to try this granola.

Recipe Tips
Pecans: You can substitute pecans according to your own preferences, for instance with walnuts, peanuts, macadamia nuts or if you like to combine different nuts just go for it.
Natural Sweeteners: I like to use maple syrup or honey. They add a nice flavor to the granola that granulated sugar simply does not have. Besides, using one of these options makes it healthier and if you use maple syrup, your granola will be vegan.
Coconut Oil: The oil adds a great crunch to the granola. I prefer unrefined coconut oil. You can use olive oil or canola oil as an alternative if you do not have coconut oil on hand or don’t like the flavor.

Directions – How to Make Double Chocolate Pecan Granola
Preheat the oven to 175°C/347°F. Line a large baking sheet with parchment paper. Chop the pecans and pour the oats and chopped pecans into a large bowl.



Melt the coconut oil in the microwave. In a medium bowl mix cocoa powder, dark brown sugar and melted coconut oil until combined.



Add honey and salt and mix until a liquid-y paste forms. Pour the mixture over the dry ingredients and mix with a silicone spatula until everything is fully moistened.



Spread in an even, flat layer on the prepared baking sheet and bake for 10 minutes. Remove from the oven and stir granola, then flatten again all over the baking sheet again. Bake for 10 more minutes.



Remove granola from the oven, sprinkle with half of the chocolate chips while the granola is still warm and stir. The chocolate will melt, creating larger clusters. Let it cool completely on a wire rack. Once cooled, add the rest of the chocolate chips and and mix again.



Storing Instructions
Storage: Keep your double chocolate pecan granola in a sealable jar or airtight container at room temperature. This will keep the granola fresh and crunchy for several weeks.
