It’s fall and that means it’s pumpkin season. I love this time of year, because I love pumpkin in all variations. In my Pumpkin Walnut Granola I used pumpkin puree, pumpkin seeds and pumpkin spice. The combination of these ingredients makes the granola simply delicious and adding extra cinnamon completes it perfectly.
By the way, you can easily make your own pumpkin spice. A little further down in my recipe tips you can find out how to do it.
What I like about homemade granola is that you can select which ingredients you use and a lot of it is easily swappable. But really the best part for me is that it doesn’t have all the additives that you find in store-bought granola.

Recipe Tips
Walnuts: You can substitute the walnuts according to your own preferences, for instance with pecans, peanuts, macadamia nuts or a mixture of different nuts.
Pumpkin Spice: You can either use store-bought pumpkin spice or easily make it from scratch. To do this, mix the following ingredients in a small bowl: 15g ground cinnamon, 5g ground ginger, a pinch of ground nutmeg, a pinch of ground cloves and a pinch of ground allspice. Of course, you can make a larger batch and keep the spice in a sealed jar.
Pumpkin Puree: If you use canned pumpkin puree, you will have leftover puree. You can store this in an airtight container in the fridge for up to 1 week or freeze it for up to 3 months.

Directions – How to Make Pumpkin Walnut Granola



Preheat the oven to 180°C/350°F. Line a baking sheet with parchment paper. Chop the walnuts on a cutting board with a sharp knife and melt the coconut oil in a small bowl in the microwave.



Mix together oats, coconut sugar, walnuts, pumpkin seeds, pumpkin spice, cinnamon and salt with a silicone spatula. Add melted coconut oil, maple syrup and pumpkin puree.



Stir well with a silicone spatula. The mixture will look a little dry at first, continue stirring until the entire mixture is fully combined. Spread the granola evenly and in a flat layer all over the baking sheet.



Place in the oven and bake for 10 minutes. Remove from oven and stir granola with a silicone spatula. Flatten and spread it evenly over the entire baking sheet again. Bake for another 10-13 minutes. The granola is done when it turns golden brown.


It will still look very soft, but as the granola cools, it will crisp up. Once it has cooled completely, pour the granola into sealable jars and store at room temperature.
Storing Instructions
Fill the Pumpkin Walnut Granola in a sealable jar or in an airtight container and store at room temperature. This will keep the granola fresh and crisp for several weeks.
