No need to look very hard to find the mini chocolate bunnies in this delicious Easter Granola. They could land on any spoon and delight you with their taste. Furthermore, it gets fruity with freeze-dried strawberries, which perfectly match the chocolate bunnies in terms of taste.

Nuts, of course, are indispensable. Today there are walnuts, peanuts and some peanut butter. The perfect finishing touch to the granola are puffed quinoa and rice, which add a little extra crunch.

The perfect breakfast for Easter, because here you can already look for some chocolate bunnies. It’s fun especially for the kids.

Tools & Equipment

  • Cutting board
  • Large baking sheet
  • Large bowl
  • Parchment paper
  • Sharp knife
  • Silicone spatula
  • Small bowl
  • Wire rack

Recipe Tips

Peanut Butter: If it’s very cold in your kitchen and the peanut butter is too firm, put it in a small bowl and microwave briefly until you have a smooth pourable consistency.
Natural Sweeteners: I like to use maple syrup or honey. Both add a wonderful flavor to the granola that regular sugar simply does not have. Besides, using one of these options makes it healthier and if you use maple syrup, your granola will be vegan. If you want to use honey, simply replace the maple syrup with the same amount of honey.
Freeze Dried Strawberries: They add a special sweetness and an irresistible fruity taste to the granola. Add the fruits to your granola once it is baked and completely cooled to room temperature.

Ingredients for Easter Granola

  • Walnuts add crunch, richness, and healthy fats while contributing a slightly bitter, nutty depth to balance sweetness.
  • Peanuts provide a roasted, savory flavor along with protein and additional texture that complements the softer ingredients.
  • Old-fashioned oats form the hearty base of the recipe, giving structure, chewiness, and slow-releasing carbohydrates.
  • Puffed quinoa introduces a light, airy crispness while boosting the protein content and nutritional value.
  • Puffed rice adds extra crunch and volume, helping keep the mixture from becoming too dense.
  • Flaxseed meal acts as a natural binder while contributing fiber, healthy fats, and a subtle nutty flavor.
  • Salt enhances and balances the sweetness, bringing out the flavors of all other ingredients.
  • Coconut oil binds the dry ingredients together and adds moisture, richness, and a mild coconut aroma.
  • Maple syrup serves as the primary natural sweetener while also helping to hold the mixture together.
  • Vanilla extract adds warmth and depth, enhancing the overall flavor profile.
  • Peanut butter contributes creaminess, acts as an additional binder, and intensifies the nutty flavor.
  • Freeze-dried strawberries provide a concentrated fruity sweetness and a slight tart contrast to the richness.
  • Mini chocolate Easter bunnies add indulgent sweetness and chocolate flavor, creating pockets of richness throughout the recipe.

Storing Instructions

Storage: Store your Easter Granola in a sealable jar or airtight container at room temperature. This will keep the granola fresh and crunchy for several weeks.
