Homemade granola may be boring to some people, but I love it, and you have so many possibilities of what to put in it, depending on your favorite ingredients. So if you love eating granola, ditch store-bought, because it’s usually full of unnecessary ingredients masked by way too much refined sugar and fat.

Besides, healthy homemade granola is so easy to make and it also tastes much better than store-bought.

Peanut Butter, Coconut Oil and Honey: If it is cold in your kitchen and the ingredients are too solid, just mix them together in a small bowl and microwave until you have a smooth liquid texture.

Natural Sweeteners: I used honey in this recipe. Alternatively, you can also use maple syrup. Both add a great flavor to your granola that regular sugar just doesn’t have. Plus, it’s healthier to use either of these options. If you use maple syrup, your granola will be vegan. To use maple syrup, simply replace the honey with the same amount of maple syrup.

Freeze-dried Fruit: I find they add an extra sweetness and irresistible fruity flavor to your granola. Make sure to add the strawberries and blueberries to your granola after it’s baked and cooled completely to room temperature.

Directions How to Make Nut & Berry Granola

Preheat the oven to 180°C/350°F. Line a large baking sheet with parchment paper. Chop peanuts, cashews and hazelnuts on a cutting board using a sharp knife.

Mix together peanuts, cashews, hazelnuts, oats, pumpkin seeds, sunflower seeds, flaxseed meal and salt with a silicone spatula. Heat coconut oil, peanut butter and honey in the microwave until it reaches a spreadable consistency, stopping and stirring in between.

Add the mixture to to dry ingredients and stir well with a silicone spatula. It looks a little dry at first, keep stirring until the entire mixture is fully combined. Spread the granola in an even, flat layer all over the baking sheet.

Place in the oven and bake for 10 minutes. Remove from the oven and use a silicone spatula to stir the granola, add the coconut flakes, stir again and flatten all over the baking sheet.

Bake for another 8-10 minutes. The granola is done when it turns golden brown. Remove from the oven and let the granola cool completely on a wire rack. Add the freeze-dried strawberries and blueberries once it has cooled completely and mix again.

Storing Instructions

Storage: Fill your granola into a sealable jar or an airtight container and store at room temperature. This will keep it fresh for several weeks.
