Peanut Butter: If it’s very cold in your kitchen and the peanut butter is too firm, put it in a small bowl and microwave briefly until you have a smooth pourable consistency.
Natural Sweeteners: I like to use maple syrup or honey. Both add a wonderful flavor to the granola that regular sugar simply does not have. Besides, using one of these options makes it healthier and if you use maple syrup, your granola will be vegan. If you want to use honey, simply replace the maple syrup with the same amount of honey.
Freeze Dried Strawberries: They add a special sweetness and an irresistible fruity taste to the granola. Add the fruits to your granola once it is baked and completely cooled to room temperature.

Preheat the oven to 180°C/350°F. Line a large baking sheet with parchment paper. Chop walnuts and peanuts on a cutting board with a sharp knife.

Add oats, chopped walnuts and peanuts, puffed quinoa and rice, flaxseed meal and salt to a large bowl. Melt coconut oil in a small bowl in the microwave. Add melted coconut oil, maple syrup, vanilla extract and peanut butter.

Stir well with a silicone spatula. The mixture will look a little dry at first, continue stirring until the entire mixture is evenly coated. Spread the granola in an even, flat layer all over the baking sheet and place in the oven.

Bake for 10 minutes. Remove from the sheet from the oven, stir granola with a silicone spatula and flatten again all over the baking sheet. Bake for an additional 10-12 minutes. The granola is done when it turns golden brown.

Remove from the oven and let it cool completely on a wire rack. As soon as it has cooled completely, add the freeze-dried strawberries and the mini chocolate easter bunnies.

Storing Instructions

Storage: Store your Easter Granola in a sealable jar or airtight container at room temperature. This will keep the granola fresh and crunchy for several weeks.

  8. Bake for an additional 10-12 minutes. Keep an eye on the granola from this point on, as it can brown and burn too much from one moment to the next. The granola is done when it turns golden brown.
  9. Remove the granola from the oven and let it cool completely on a wire rack. The granola will still look very soft, but as it cools, it will become crunchy. 
  10. As soon as it has cooled completely, add the freeze-dried strawberries and the mini chocolate easter bunnies and mix gently once again.
