Apple fritters are so fluffy and can be easily made at home. They make a delicious breakfast, dessert or afternoon snack. The fritters taste best warm, right out of the oil. Just roll them briefly in a sugar-cinnamon mixture and you’re good to go. They’re gone in no time, as they’re absolutely luscious.

The batter is simple and comes together quickly. You do not necessarily need a deep fryer. Just use a heavy bottomed pot or dutch oven and an instant read thermometer to keep an eye on the temperature.

Tools: it is helpful to use an instant read thermometer to measure the temperature of the oil. Using a dutch oven will help the oil maintain its temperature.

Temperature: during the frying process of the fritters, the temperature should remain constant at 190°C / 375°F. The temperature will drop when you add batter and rise when you remove the fritters from the oil. So keep an eye on the temperature. 

Frying: do not overcrowd the pan when frying so that the fritters cook better and the oil temperature remains more stable. If the temperature is off, wait until the oil is hot enough again before frying the next batch.

Directions – How to Make Apple Fritters

Weigh your ingredients and heat the oil in a deep fryer or dutch oven to 190°C / 375°F. Wash, peel, core and dice the apples.

Melt the butter in a skillet. Add the apples and cook over medium heat until slightly softened. Remove from heat and let the apples cool to room temperature.

Whisk together flour, sugar, cinnamon, baking powder and sal. Add milk, vanilla extract, eggs and oil and mix until well combined. 

Fold in the apples until evenly distributed. Grab a deep plate and combine the granulated sugar, brown sugar and cinnamon to make the coating.

Drop the batter into the hot oil and fry until golden, for about 2 1/2 minutes. Flip and fry the other side until golden, for about an additional 2 1/2 minutes.

Carefully remove the fritters from the hot oil and drain briefly on a paper towel. Roll in the cinnamon sugar mixture while still warm.

Enjoy immediately while still slightly warm.

Storage: keep the apple fritters in an airtight container or wrapped in paper towels in a paper bag at room temperature for up to 2 days or in the fridge for up to 1 week. To reheat the fritters, place them on a plate and cover with a damp paper towel. Microwave in 10-second intervals until warm. Freeze the apple fritters on a baking sheet until frozen solid. Place the frozen fritters in a zip-lock bag and freeze for up to 3 months.

Ingredients

For the Fritters
  • 350g apples - peeled, cored and chopped
  • 15g butter
  • 188g all-purpose flour (550)
  • 12g granulated sugar
  • 4g cinnamon
  • 8g baking powder
  • 3g salt
  • 85g whole milk
  • 10g vanilla extract
  • 2 large eggs, beaten
  • 14g vegetable oil
For the Coating
  • 150g granulated sugar
  • 50g light brown sugar
  • 5g cinnamon
For Frying
  • 1 liter vegetable oil

Instructions

  1. Wash, peel, core and dice the apples.
  2. Melt the butter in a skillet.
  3. Cook the apples in the skillet over medium heat until slightly softened. Remove from heat and let cool to room temperature.
  4. Heat the oil in a deep fryer or dutch oven to 190°C / 375°F.
  5. In a large bowl, whisk together flour, sugar, cinnamon, baking powder and salt with a wooden spoon. 
  6. Add milk, vanilla extract, eggs and oil and mix until well combined. 
  7. Fold in the apples until they are evenly distributed.
  8. To make the coating, grab a deep plate or a medium bowl and combine the granulated sugar, brown sugar and cinnamon. Set aside.
  9. Drop the batter into the hot oil using an ice cream scoop or two tablespoons and fry until golden, for about 2 1/2 minutes. Flip the fritter and fry the other side until golden, for about an additional 2 1/2 minutes.
  10. Use a slotted spoon to carefully remove the fritters from the hot oil and drain briefly on paper towels. 
  11. Roll in the cinnamon sugar mixture while still warm.
